"Jiryis," a twenty-three-year-old resident of Ramallah, earns his living from the restaurant business. Young, energetic, and without a family to provide for, he is in many ways atypical of the small proprietors who have played so important a role in the uprising. Business for him is more a livelihood than a way of life, a means toward a better end rather than the bedrock of his prosperity. His ambitions have suffered because the fast-food speciality restaurants, something of a novelty in the West Bank, have been particularly hard hit during the uprising. It should be noted that he was interviewed at a time when the economy appeared to be literally disintegrating (August 1989), so his occasionally pessimistic outlook should be put in proper perspective.
